Hey Katherine, A couple of tips: 1/ Roll them out thinner- thicker tortillas will break easier. 2/Add more hydration. If the flour wasn’t weighed, it can be easy to add more flour than added. Adding a bit more hydration (liquid) can help. Homemade tortillas aren’t as pliable as commercial ones, but they should still hold taco filling without breaking.

Hey Joanna, I’m not sure why that happened. The muffins should not come out like that. I make them almost weekly and haven’t ever experienced that, so I don’t really know how to advise about what may have gone wrong. I don’t recommend almond flour, as the recipes should work well with almond butter and almond flour would need a liquid to make the recipe work.

I followed the recipe to the letter but my muffins were very stodgy, not at all fluffy. I used my own homemade almond butter with nothing added to it but do wonder if the huge about of fat is the principal cause of the heavy result. Can I modify this recipe to substitute some of the almond butter for almond flour to produce a lighter, fluffier muffin please?

Hey Lesley, Did you add arrowroot starch to help decrease the oiliness? You can add more oil, but that may make it more oily – what kind of oil did you use? Adding more oil won’t effect the essential oils.
